Watermelon cake is one recipe I tried and its taste is beyond my expectations. INGREDIENTS Watermelon (seedless) Strawberries Blueberries Lemon juice Apples (diced) METHOD Slice the fruits into thin slices and set aside (All except the watermelon). Cut out 4¾ watermelon slices. Place one watermelon slice on a serving plate and top with fruits. Repeat until all layers of watermelon are topped with fruit slices. NOTE: When cutting the watermelon slices, use a small plate as a guide). Also, to keep the cake together, use skewers all through the layers but do not forget to remove them before serving. Amiwo. INGREDIENTS Corn flour 4 tbsp Vegetable oil 1 medium yellow onion (chopped) 4 tbsp Tomato paste Red chilli pepper Seasoning cubes Salt METHOD Heat oil in a non-stick pot for 2 minutes, add onion and garlic on medium heat and stir for 3 minutes, until soft but not caramelised. Add the tomato paste and stir for 2 minutes then pour 3 cups of water, salt and seasoning cubes. Stir thoroughly and allow to boil. Slowly add the flour to the boil and whisk to get a firm paste. When mixed, turn the heat to low and cover for 10 minutes to steam. Stir frequently to avoid burning. Transfer the paste onto small moulds and let it sit for 20 minutes to solidify the paste. Transfer to a plate and garnish with pepper. Enjoy. KIWI BELLINI WITH MINT LEAVES You can never go wrong with a glass of cocktail with a meal. INGREDIENT Kiwi Mint leaves Lemon juice Sugar 1 glass Champagne (cold) METHOD Place Kiwi, lemon juice and sugar in a blender and blend until smooth.
