LAMB AND MANGO CURRY INGREDIENTS Lamb meat (Chopped) Mango (Peeled and diced) 100g Curry paste 2 Onion bulbs ½ tsp Cooking oil 2 garlic cloves (Crushed) 3 peeled ginger (Grated) 1 cinnamon stick Tomatoes (Chopped) Coriander leaves (Chopped) Seasoning cubes Salt METHOD Wash and put lamb meat in a pot. Add onions, seasoning cubes and salt and cook for 5 minutes. Remove the meat and put the stock aside. Heat up oil in a saucepan over medium-high heat. Fry the onion for 8 minutes until soft, add ginger and garlic and stir-fry for 1 minute. Stir in the curry paste and cook for 2 minutes, then add the cinnamon stick, lamb meat and coriander leaves and water. Cook for 5 minutes. Put in the tomatoes, meat stock, and reduce the heat to low. Cook, stirring occasionally until the meat is very tender. Stir in the mango and a handful of coriander leaves and cook for 15 minutes. Serve with rice and a glass of wine (optional). MANGO AND PASSION FRUIT FOOL INGREDIENTS Ripe mangoes Passion fruits (Halved) Greek yoghurt Lime juice (I lime) METHOD Peel and dice one half of the mangoes and purée the other half. Squeeze out the seeds from the passion fruits and mix with the purée. Add lime juice and gently add the yoghurt and combine. Divide the drink into 4 glasses and top with the remaining diced mangoes. Cover and refrigerate for 30 minutes. Scoop the remaining seeds of the passion fruits and cover the drink. Enjoy. MANGO ICE CREAM INGREDIENT Mangoes Sweetened condensed milk 2 cups of heavy cream or whipped cream METHOD Dice the mango and blend. Add sugar if you want to. Pour cream into a bowl and whisk until peaks form. Then add the mango puree and fold gently. Pour the batter into a bowl and refrigerate overnight. Scoop and enjoy.
