INGREDIENTS Yam (Diced) All-purpose flour Onion (Chopped) Cooking oil Butter Sardine Egg (Separate egg white from yolk) Bread crumbs Red pepper (Chopped) Green pepper (Chopped) ½ tbsp Salt ½ tbsp Thyme Seasoning cubes METHOD Wash and pour the yam into a pot and add water. Boil it for 20 minutes or until soft and drain. Pour the yam into a mortar and pound thoroughly until smooth. Add butter, chopped onions, red and green pepper, sardine, egg yolk, salt, thyme and mix together. Wash your hand, scoop and mould into balls. Dip the balls into the flour, transfer them to the egg white then into the bread crumbs and set aside. Pour the oil into a saucepan and heat up. Drop the yam balls and deep fry for 10 minutes until golden brown. Serve with a small bowl of peppered sauce. Banana Stew by Jasmine Hemsley. INGREDIENTS Green banana Beef 1 medium Onion (Diced) 3 Tomatoes (Chopped) 2 tbsp Curry powder ½ tbsp Black pepper (Ground) 1 ½ Cooking oil 1 ½ tbsp Coconut milk ¼ Cayenne pepper 1 bay leaf 2 cloves Garlic Seasoning powder Salt METHOD Wash beef and put it into a pot. Add garlic, salt, seasoning powder, curry powder, bay leaf and water and cook on medium heat until meat is soft for 20 minutes. Heat up oil on low, put the chopped onions and stir for 3 minutes. Pour the onions into the pot of beef sauce, add tomatoes and stir to combine and allow to simmer for 5 minutes. Peel bananas with a knife and dice. Put into a bowl of water to avoid discolouration. When the sauce is ready, put the diced bananas into the pot and stir thoroughly. Cook for 7 minutes. Finally, pour the coconut milk and stir. Allow to simmer for 10 minutes. Enjoy.
